Loaded Sweet Potato

If you are a sweet potato lover like me, then this is the dinner for you! This loaded sweet potato is full of healthy carbs, fats and protein and is the perfect way to end your day, and to refuel for the next day!

 


What you'll need:

One medium sweet potato

Three cups spinach

One cup mushrooms

One cup chick peas

2 tsp olive oil

1 tbs tamari or soy sauce

Garlic powder, salt and pepper

 

Directions:

First, preheat the oven to 400 degrees. After poking 5-6 holes a long the top of the potato wrap in tin foil and set on the baking sheet. Bake in oven for 45 minutes to an hour. While that is baking, take on cup of cut mushrooms, three cups of spinach and one cup of chick peas and set in a bowl. Wait until the potato is done baking and set aside to cool down. While that is happening sauté the mushrooms, spinach and chick peas in a pan with 2 tsp olive oil and one tablespoon tamari or soy sauce. Add garlic powder, salt and pepper to taste. Cut the sweet potato open to create some room for the sautéed veggies and chickpeas to fit! (they might overflow) There you have it, a loaded sweet potato! Tastes even better with a glass of red wine! Enjoy!
